Words can’t express just how much I truly appreciate the produce of summer.
Near our townhouse grows a community vegetable garden.
One that was started by an older gentleman many years ago. The community has carried on his memory and tradition by carefully tending to the fresh produce that grows there each summer season. Seeing the bright red tomatoes for the first time this summer immediately took me back to last year. A 26 year old girl who had just moved cross-country. That garden, first discovered on a venture out with the dogs, was one of the first things I fell in love with about this place I would soon grow to call home.
Nothing quite says summer like fresh corn, perfectly ripe peaches, bright red tomatoes, or freshly picked green zucchini.
I hope you enjoy this dish (perhaps with a fresh veggie salad) and bask in the delight of all things summer yields and brings
