As fall starts to emerge in the distance, I have started to yearn for pumpkin spice lattes and cinnamon flavored candles.
As one season ends and another is on the brink of beginning, one of our favorite things to do has been to grill for dinner. The combination of the warmth in the evenings on our patio, dogs alongside, and enjoying being outdoors while weather permits has been refreshing and one of my favorite ways to relax and spend time together.
At our local Giant Eagle, we are fortunate to have a selection of local produce from nearby farms available for very reasonable prices. We love to scoop up the deals of the week and incorporate them into our grilled meals.
Today, I wanted to share with you just a few of my favorite vegetables that in my opinion, taste so much better charred on the grill. The best part, it takes a matter of minutes for these vegetables to taste even better after a little while over the fire. I hope you enjoy as much as we do!
1. Eggplant- simply cut an eggplant in half and place on a sheet of coconut-oiled aluminum foil. Sprinkle with a little sea salt, Italian seasoning, black pepper, and minced garlic and drizzle coconut oil on top. Fold up the foil to form a packet and grill for approximately 10-15 minutes until the edges are blackened and the eggplant is softened, almost collapsing. The smokey flavor is so incredibly delicious!
2. Bell Peppers- cut peppers lengthwise and discard stems and seeds. Coat peppers in light coating of coconut oil and add a sprinkle of sea salt and black pepper. Place peppers on aluminum foil and fold foil to form a packet. Grill for 5-10 minutes or until peppers are softened and lightly charred.
3. Asparagus- Cut the ends of off the stems and coat in a light coating of coconut oil. Place asparagus on aluminum foil and add freshly minced garlic and lemon juice. Fold foil to form a packet and grill for 10-15 minutes until asparagus have softened. Sprinkle with a little freshly grated parmesan cheese or slivered almonds and enjoy!
